Recipe Ingredients for SWEET POTATO OR WINTER SQUASH MUFFINS (DAIRY)

1 3/4 cup whole wheat pastry flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1/4 cup canola oil
1/3 cup molasses or silan (date honey)
2 eggs
1/2 cup buttermilk
1 cup sweet potato (or winter squash), cooked and pureed
1/3 cup brown sugar
1/2 cup chopped dates (or other dried fruit - raisins, apricots, or candied ginger), optional

Recipe Directions for SWEET POTATO OR WINTER SQUASH MUFFINS (DAIRY)

  1. Preheat the oven to 375 degrees Fahrenheit (190 Centigrade).

  2. Line 12 muffin tins with paper liners.

  3. In a large bowl, whisk together the flour, baking powder, baking soda, salt, ginger and cinnamon and set aside.

  4. Mix together the oil, molasses or silan, buttermilk and eggs. Add the buttermilk and mix well.

  5. Add the sweet potato or squash and the brown sugar and mix well.

  6. Stir in the chopped dried fruit or candied ginger.

  7. Add the wet ingredients to the flour mixture and mix just to combine.

  8. Spoon the batter into the muffin tins.

  9. Bake for 20-25 minutes, until a toothpick comes out dry.
