618 grams Sweetpotato
491 grams Parsnips
225 grams Onions
800 grams Carrots
400 grams Turnips
250 grams Leeks
198 grams Watercress
144 grams Rocket
198 grams Spinach
60 grams Red Swiss Chard
10 grams Olive Oil

Recipe Directions for Sweet potato and Watercress soup

  1. Fry the onions in the olive oil until brown, add the root veg and about 1 litre of water, herbs and stock cube if desired and bring to the boil and simmer until soft. Add the leeks and simmer for 5 minutes, then add the leaves and allow to wilt.

  2. leave chunky or blend when cool and split into portions, this makes about 20 portions but depends on appetite.
