Sweet Potato w/ Warm Black Bean Salad

Recipe Ingredients for Sweet Potato w/ Warm Black Bean Salad

2 sweet potato
15 1/2 ounce black beans
2 tomatoes, medium
1 tbsp olive oil
1 tsp cumin
1 tsp coriander
1/2 tsp salt

Recipe Directions for Sweet Potato w/ Warm Black Bean Salad

  1. Prick sweet potatoes with fork. Place in baking dish and bake at 425 for about 1 hour, until tender.

  2. Meanwhile, heat remaining ingredients in small sauce pan just until warm.

  3. When cool enough to handle, cut sweet potato into bite size pieces.

  4. Serve Black Bean Tomato mixture over sweet potato.
