Recipe Ingredients for Sweet Potato Waffles

1/2 cup whole wheat flour
1/2 cup all-purpose flour
2 teaspoons baking powder
1 teaspoon cinnamon
1/4 teaspoon clove
1/8 teaspoon allspice
1/8 teaspoon ginger
2 T chopped walnuts
1 egg
3/4 cup 2% milk
1/2 cup cooked sweet potato
1 1/2 tablespoons oil
1/2 tablespoon granulated sugar

Recipe Directions for Sweet Potato Waffles

  1. Combine all dry ingredients and walnuts.

  2. Combine egg yolk, milk, sweet potato (mashed with a fork), and oil. Add to the dry ingredients and stir until just combined and moistened.

  3. Using an electric mixer, beat the reserved egg white with the sugar until stiff peaks fold. Fold into the batter.

  4. Spray your waffle iron and spread batter into iron, cooking to desired level.
