Recipe Ingredients for Sweet Potato, twice baked (Crystal's version)

1 c. sweet potato
1 tsp bacon drippings
1/8 c. fat free cottage cheese
1/8 c. green onion, chopped
1 tsp lemon juice
1/4 tsp black pepper

Recipe Directions for Sweet Potato, twice baked (Crystal's version)

  1. Wash/pat dry potatoes (2 large or enough to make 4 cups)

  2. Pierce skin all over with fork

  3. Nuke (on high) Sweet Potato(es) 7 min (1) to 10 min (2) or until done

  4. Remove, cut in small bite sized pieces (skin and all)

  5. Mash

  6. Add other ingredients, stir to blend

  7. Mash again for final blend of ingredients (leave lumpy)

  8. Nuke (on high) for another 3 min (loosely covered)

  9. Serve
