Recipe Ingredients for sweet potato tacos (tacos de papa)asZ

1000 sweet potatoes
1 tbl olive oil
1 med yellow onion, sliced
1 bell pepper (red or yellow), finely diced
1/2 tsp pepper
2 cloves garlic, minced or pressed
1/4 tsp cayenne pepper
1/2 jalapeno pepper
8 Tortillas
16 tbsp salsa

Recipe Directions for sweet potato tacos (tacos de papa)asZ

  1. Steam cubed potatoes in steam basket until fork tender (20-25 minutes).

  2. Meanwhile, in a medium saute pan, over medium hear, heat the olice oil. Add the onion and diced bell pepper and cook for about 7 minutes or until the vegetables are translucent. season with salt and pepper to taste, and set aside.

  3. When sweet potatoes are finished cooking transfer to a large bowl, along with the minced garlic, and cayenne , jalapeno, pepper and onion mix; addsalt to taste.Mash all ingredients together as you would mashed potatoes or leave somewhat chunky.

  4. Fill the tortillas, sprinkle with chopped cilantro, top with peach salsa and serve. this makes a beautiful presentation.
