Sweet Potato and Squash Soup Recipe

Lovely rich soup great for a cold day

Recipe Ingredients for sweet potato and squash soup

1 lb Butternut squash, diced
12 oz sweet potatoe
1 tbsp olive oil
1/2 tsp fresh chili
1 tsp fresh chopped ginger
1 clove garlic
200 g lima beans

Recipe Directions for sweet potato and squash soup

  1. Peel and dice the squash (usually half of a whole squash) and sweet potato

  2. Finely chop the chili (I use red so it's not so strong), ginger (about 1 inch of the root, peeled) and garlic - use more or less to suit your taste.

  3. Fry the spices in the olive oil in a heavy bottomed pan for a few moments.

  4. Add the sweet potato, cover the pan to sweat for about 3 or 4 minutes, then add the squash, mix and cover the pan to sweat for another 5 minutes.

  5. Add the stock and leave to simmer for about 20-30 minutes until the vegetables are so soft they start to break up. Using a potato masher crush the sweet potato and squash in the stock until it becomes a thick soup. Don't worry about any chunks that might be left they add to the texture. I guess if you want to you can blend it at this point.

  6. Drain and rinse the lima beans, add to the soup, leave to simmer for 5 minutes then serve.

  7. Enjoy with a nice slice of crusty whole grain bread... yum!
