Recipe Ingredients for Sweet Potato and Spinach Casserole

1 sweet potato, large
2 T olive oil
3 garlic cloves
1 onion, large, chopped
4 c spinach
1 t rosemary, fresh, minced
15 oz ricotta
8 oz cottage cheese
2 c mozzarella, grated

Recipe Directions for Sweet Potato and Spinach Casserole

  1. Preheat oven to 400 degrees

  2. peel and slice sweet potato into thin slivers

  3. in a large skillet, heat the olive oil. Add the galric and onion and cook for 1 minute

  4. Add the spinach and rosemary and saute until the spinach wilts

  5. In a large bowl, mix together ricotta, cottage cheese and 1.5 cups of mozzarella.

  6. In a 10 by 6 inch casserole dish, layer the sweet potato slices on the bottom, then spread with half the spinach mixture. cover this layer iwth half the cheese mixture. Repeat the layering, starting with the sweet potato slivers and ending with the cheese. Spring the top with the remaining 1/2 c mozzarella.

  7. Cover tightly with foil and bake for 45 minutes. Remove foil and bake for 10 more minutes or until top is browned.
