Delicious moist whole wheat muffin! Dried cranberries are nice instead of the raisins and you can also add lightly toasted nuts, if you like!

Recipe Ingredients for Sweet Potato and Spice Muffins

1 1/2 cup WHOLE WHEAT FLOUR
1/2 cup oat bran
1/2 cup brown Sugar
2 teaspoon Baking Powder
1/2 tsp Baking Soda
1/2 tsp Salt, Table
1/2 tsp Cinnamon, Ground
1/4 tsp Nutmeg, Ground
1 1/2 cup, mashed Sweetpotato
1 cup Milk, Buttermilk, Fluid, Cultured, Lowfat
2 large Egg, Whole
1/2 cup (not packed) dried cranberries
1 1/2 cups Pecans

Recipe Directions for Sweet Potato and Spice Muffins

  1. Stir together all dry ingredients.

  2. Stir together all wet ingredients.

  3. Pout the wet ingredients over the dry ingredients, and add the raisins.

  4. Stir just to combine.

  5. Scoop into muffin cups and bake at 375F until the muffins spring back when touched lightly in the center.
