Recipe Ingredients for Sweet Potato Souffle

912 grams sweet potatoes
4 eggs
1/2 cup sugar
1 tsp cinnamon

Recipe Directions for Sweet Potato Souffle

  1. Preheat oven to 350

  2. Peel sweet potatoes (I used 4 large ones). Boil in water until softened, then drain off all water.

  3. Whip with hand mixer until smooth.

  4. Beat in 4 egg yolks (reserve whites) along with sugar and cinnamon.

  5. Beat egg whites until stiff peaks form.

  6. Gently fold potato mixture and egg whites together.

  7. Spoon into glass baking dish.

  8. Bake for approx 30 minutes until it puffs up and the top is golden brown.
