A hearty mixture of sweet potato, shrimp, and corn for a delicious soup! I added pepper and oregano at the end to give it more flavor.

Recipe Ingredients for Sweet Potato & Shrimp Soup

3/4 lb shrimp
1 tablespoon Olive Oil
1 tablespoon minced garlic
2 tablespoon flour
14 ounce can tomato sauce
1 cup chicken broth
2 cups diced sweet potato
1 cup frozen corn

Recipe Directions for Sweet Potato & Shrimp Soup

  1. Thaw out shrimp, set aside. In medium saucepan, heat oil over med-high heat. Add garlic and cook, stirring 10 seconds. Stir in flour and cook, stirring 5 seconds.

  2. Add tomato sauce, broth, and 1 1/2 cups cold water, then increase heat to high and bring to a boil. Add potato, corn, black pepper and return to a boil. Cover, reduce heat to medium-low, and simmer for 10 minutes or until potatoes are just tender.

  3. Add shrimp and oregano, raise heat to medium-high and cook, stirring for 3-5 minutes or until shrimp is cooked.

  4. Garnish with extra pepper and salt if desired.
