Vegetarian Sweet Potato Shepherd's Pie

Recipe Ingredients for Sweet Potato Shepherd's Pie

1 medium (2" dia, 5" long, raw) Sweetpotato
0.25 tsp Cinnamon, Ground
1/4 tsp Nutmeg
1 tbsp Butter
12 fl oz Organic Low Sodium Chicken Broth
1 medium (2-1/2" dia) Onions
0.5 medium raw Onion Red
2 clove Garlic
1 medium Carrots
1 cup, cubes Turnips
14 oz Butter Beans ' Large
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Green

Recipe Directions for Sweet Potato Shepherd's Pie

  1. Boil sweet potato, mash, add butter, cinnamon, and nutmeg. Set aside.

  2. Heat saucepan. Add 1/4 cup of low sodium broth. Add chopped onions and minced garlic. Cook until soft.

  3. Add chopped carrot and turnips. Cover and simmer until turnips are soft.

  4. Add beans.

  5. Pour into a 2 qt casserole dish. Mix in diced & deseeded green pepper. Sprinkle with rosemary.

  6. Cover with dolliops of sweet potato mash.

  7. Bake at 375 F for 35 minutes.
