Recipe Ingredients for Sweet Potato Shepherd's Pie

2 lb extra lean ground beef
3 cloves garlic, minced
1/4 c tomato paste
1 c celery, chopped
1 c onions, chopped
1 c carrots, chopped
1 c turnip, chopped
1 c corn
1 c sweet green pepper
2 bay leaves
1 1/4 tsp salt
1/2 tsp pepper
1 tsp dried thyme
14 tsp ground nutmeg
2 tbsp all-purpose flour
1/2 c beef broth
1/4 c water
1 1/2 tsp worcestershire sauce
3 c sweet potatoes, peeled and chopped
1/3 c skim milk
2 tbsp butter

Recipe Directions for Sweet Potato Shepherd's Pie

  1. In Dutch oven, cook beef and garlic over med heat until browned (about 10 min).

  2. Stir in tomato paste, cook, stirring about 1 min.

  3. Stir in celery, onions, carrots, turnip, green pepper, bay leaves, salt, thyme, pepper & nutmeg. Cook stirring occasionally until tender (about 15 min).

  4. Stir in flour; cook, stirring for 1 min.

  5. Stir in broth, 1/4 c water & worcestershire sauce & simmer for 3 min. Discard bay leaves & divide between two 8-in square baking dishes.

  6. Meanwhile, cook sweet potatoes in large pot of boiling water until tender (about 12 minutes).

  7. Drain & return to pot, cook stirring until dry about 1 min.

  8. Stir in milk & butter. Mash until smooth. Spread evenly over meat mixture.

  9. Bake at 350 degrees until bubbly (about 35 minutes).

  10. You can freeze (cover with plastic wrap and then foil).

  11. Bake uncovered and frozen at 350 for 50 to 60 minutes.
