Sweet Potato crusted shepherd's pie

Recipe Ingredients for Sweet Potato Shepherd's Pie


Ingredients:
1 tbsp (15ml) olive oil
1 onion, chopped
1 clove garlic, finely chopped
1 carrot, chopped
1 stalk celery, sliced
2 lbs lean ground beef
1 cup (250ml) beef stock
1 (28oz) tomatoes, crushed, canned
2 tbsp (25ml) Worcestershire sauce
1 cup (250ml) frozen peas
1 cup (250ml) frozen corn

Sweet potato topping:
1 (2.5 lbs) sweet potato, peeled and cut into chunks
2 tbsp (25ml) orange or apple juice
1 tbsp (15ml) honey
1 tsp (5ml) salt
1 tsp (5ml) paprika

Recipe Directions for Sweet Potato Shepherd's Pie

  1. Heat oil in a large deep skillet and add onions and garlic. Cook gently about 5 minutes until tender and gragrant. Add carrot and celery and cook another few minutes until softened.

  2. Add ground meat, breaking it up with a wooden spoon .Cook about 10 minutes or until all traces of rareness have disappeared. Add stock, tomatoes,Worcestershir and tabasco and cook for about 20 mins until thick. Remove from heat - add peas, corn and salt and pepper to taste. Cool.

  3. Meanwhile, cook the potatoes in a large pot of boiling water for 15-20 minutes or until very tender. Drain well. Mash sweet potoatoes with orange juice and honey. Season with salt and pepper. Cool

  4. Spread meat mixture in the bottom of a 9x13 baking dish. Spread mashed potatoes on top. Dust top with paprika. Back at 350F for 30-40 minutes (until browned and bubbling)
