Recipe Ingredients for Sweet Potato Scones (Superfoods Rx)

1 cup whole wheat pastry flour
2 tbs whole wheat pastry flour
1/4 cup oats
2 tbs ground flaxseed
2 tbs wheat germ
2 tsp baking powder
1/2 tsp baking soda
1/4 tsp ground cinnamon
1/8 tsp ground nutmeg
2 tbl brown sugar
1/3 cup dried blueberries (currants or raisins)
1 cup shredded sweet potato (or winter squash like butternut, acorn, or Hubbard)
1/3 cup nonfat yogurt or buttermilk
1 large egg (omega-3)
1 1/2 tbl canola oil
2 tsp orange zest

Recipe Directions for Sweet Potato Scones (Superfoods Rx)

  1. Preheat oven to 425 degrees F. Oil baking sheet.

  2. In a large bowl, combine the flour, oats, flaxseed, wheat germ, baking powder, baking soda, cinnamon, nutmeg, brown sugar, dried fruit and sweet potato. Stir in yogurt (or buttermilk) egg, oil, and orange zest and mix until just combined.

  3. With lightly floured hands, knead the dough in the bowl for several minutes. When smooth, turn onto lightly floured surface and pat to 1/4" thick. Using a cookie cutter or glass, cut into 1 1/2" rounds. Gather scraps, gently pat into a ball, re-flatten, cut more scones.

  4. Place the scones on the baking sheet about 1" apart. Bake 8-10 minutes, until golden brown. Serve warm with or without nut butter and jam or marmalade.
