Savory vegetarian sandwich made with sweet potatos. Recipe by Jennifer Low, courtesy of the Food Network. (altered, took out shredded cheese)

Recipe Ingredients for Sweet Potato Sandwich wrap

1 sweet potato, peeled
2 teaspoons of olive oil
1 tablespoon lime juice
1/4 teaspoon of cumin
2 serving Flour Tortilla Wraps
1/4 sweet, green pepper

Recipe Directions for Sweet Potato Sandwich wrap

  1. Place cubed sweet potato into saucepan with olive oil and just enough cold water to cover

  2. Bring to simmer and cook until sweet potato is soft, about ten minutes

  3. Drain

  4. Toss with lime juice and cumin

  5. Use fork to crush avocado on tortilla wraps. Squeeze additional lime juice over avocado

  6. Add green pepper, small mound cooked sweet potato on top.

  7. Roll wraps tightly. Slice in half. Wrap sections in plastic wrap to hold.
