Cold, sweet, spicy, lite summer salad.

Recipe Ingredients for Sweet Potato Salad

3 medium yams, peeled and cubed
1 large yellow squash, cubed
1 can sliced beets, drained
8 3/4 ounce Del Monte no salt added whole kernel corn, drained
15 ounce Bush's black beans, drained and rinsed
1 jalapeno pepper, minced with seeds
50 grams red onion, diced
1/2 cup lime juice
1/4 tsp salt
1 tbsp cilantro, minced
1 tbsp brown sugar

Recipe Directions for Sweet Potato Salad

  1. Steam yams for five minutes. Cool. Reserve yam juice.

  2. Mix everything together, including yam juice, and marinate several hours.

  3. Serve cold with salsa and sour cream.
