A very aromatic treat that feels like cheating. :)

Recipe Ingredients for Sweet Potato & Rice

1 medium Sweetpotato
2 tbsp Vegetable Oil, Canola
1 tbsp Lemon Juice, Canned Or Bottled
0.5 medium raw Onion Yellow
1 tsp Cinnamon, Ground
1 tsp Tandoori Seasoning
1 dash Pepper, Black
1 dash Salt, Table
1 tsp Garlic
2 cup Rice, White, Long-grain, Regular, Cooked

Recipe Directions for Sweet Potato & Rice

  1. Chop the veggied into bite-sized peices.

  2. Stir-fry everything except rice.

  3. Reduce heat and simmer covered (you may want to add about 1/4 C of water to the mix) for a while (until the liquids reduce and the potato is tender.

  4. Once the potatoes are cooked to your liking, add a little bit more water and the rice. Stir and cook until the rice is hot.
