Recipe Ingredients for Sweet Potato Quiche Cups

16 oz Sweetpotato
6 large egg Eggland's Best Egg
1 cup Ricotta, Part Skim Milk Cheese
1 tbsp Basil, Fresh
1 tsp Kosher Salt
0.13 tsp Nutmeg, Ground
0.25 cup Parmesan, Grated Cheese

Recipe Directions for Sweet Potato Quiche Cups

  1. Cook, peel, mash, and cool 16 oz of sweet potato.

  2. Beat eggs in medium bowl.

  3. Whisk together cooled sweet potatoes, ricotta cheese, salt, and nutmeg.

  4. Whisk in the beaten eggs.

  5. Stir in julienned fresh basil.

  6. Place 1/4 cup of mixture into each of twelve prepared muffin cups.

  7. Sprinkle grated Parmesan cheese over the batter.

  8. Bake until golden brown, 22 minutes at 375 degrees.

  9. Let cool 10 minutes.

  10. Loosen each quiche by running a knife around the edge. Gently lift out onto plate.

  11. One serving = two quiche cups.
