Recipe Ingredients for Sweet Potato Puree

8 lbs sweet potatoes
1/4 cup butter, melted
1/4 cup heavy cream
2 eggs, beaten
1/2 teaspoon cinnamon
1 teaspoon vanilla
1 salt, to taste
3/4 cup pecans, chopped

Recipe Directions for Sweet Potato Puree

  1. Heat oven to 350 degrees.

  2. Peel and mash sweet potatoes.

  3. Combine with butter, cream, eggs, cinnamon, vanilla, salt and 1/2 cup pecans. Blend thoroughly.

  4. Place mixture in a casserole, top with remaining pecans.

  5. Bake 30 minutes.

  6. May be made a day or 2 ahead and refrigeraed.

  7. Return to room temperature and bake.
