Recipe Ingredients for Sweet Potato pudding

2 1/2 cup potato, sweet
1 cup skim milk
1 cup dry skim milk
1 cup egg substitute
1 cup splenda
1 tsp cinnamon, ground
1/2 tsp ginger, ground
1/2 tsp nutmeg, ground

Recipe Directions for Sweet Potato pudding

  1. Peel, cut into 1" cube & boil sweet potatoes

  2. Combine remaining ingredients in a bowl & mix

  3. Drain Potatoes when soft & mash

  4. Pour into 9" pie dish (deep dish pie dish)

  5. Bake at 400 Degrees for 45 minutes or until knife pulls out clean

  6. slice into 8 sections and serve
