Recipe Ingredients for Sweet Potato Poundcake

1 cup whole wheat pastry flour
3/4 cup flour
2 teaspoons baking powder
1 teaspoon nutmeg
1/2 teaspoon salt
1 cup sweet potatoes, boiled, mashed
1 egg
1 egg white
2/3 cup sugar
1/4 cup butter, unsalted
1/4 cup canola oil
2 tablespoons milk
2 teaspoons orange peel

Recipe Directions for Sweet Potato Poundcake

  1. Sift dry ingredients and set aside.

  2. Add mashed sweet potatoes to eggs; beat in sugar and eggs.

  3. Add dry ingredients, milk, and orange peel.

  4. Blend thoroughly.

  5. Pour batter into a greased 9 x 5 inch loaf pan.

  6. Bake at 350 degrees for 45-60 minutes or until bread springs back in center when lightly touched.
