Recipe Ingredients for Sweet Potato Pound Cake

18 1/4 oz. Cake, yellow, dry mix (1 box Pillsbury classic yellow) [i18142]
2 T. butter
2/3 cup water
1 1/2 cups sweet potatoes, baked and mashed
3 tsp. cinnamon
1 tsp. nutmeg
1/2 tsp. ginger
3 eggs

Glaze:
4 servings cream cheese, neufchatel
1/4 cup apple butter
3/4 cup powdered sugar

Recipe Directions for Sweet Potato Pound Cake

  1. Put first six ingredients in food processor and mix until smooth and creamy. Pour into greased bunt or tube pan.

  2. Bake at 350* for app. 40 minutes.

  3. Cool for 10 minutes and remove from pan.

  4. Mix remaining ingredients and pour as a glaze over the cake.
