Recipe Ingredients for Sweet Potato Pie

19 ounces sweet potatoes, peeled and cubed
1 1/4 cups plain yogurt
165 grams dark brown sugar
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
5 egg yolks
1 tsp. Salt
216 grams frozen pie shell (9 inch), deep dish
1/4 cup sugar
3 large egg whites

Recipe Directions for Sweet Potato Pie

  1. Put cubed potatoes into steamer basket and place steamer basket into a large pot of simmering water that is no closer than 2 inches from the bottom of basket. Allow to steam for 20 minutes or until the potatoes are fork tender. Mash with potato masher and set aside.

  2. Preheat the oven to 350 degrees F.

  3. Place sweet potatoes in the bowl of a stand mixer and beat with the paddle attachment. Add yogurt, brown sugar, cinnamon, nutmeg, yolks, and salt, to taste, and beat until well combined. Pour this batter into the pie shell and place onto a sheet pan.

  4. Bake for 50 to 55 minutes or until the custard reaches 165 to 180 degrees. Remove from oven and cool.

  5. Add: Meringue. Place the pie on a rack and cool to room temperature before covering with meringue. Using an electric mixer, beat the egg whites until soft peaks form; beat in the remaining 1/4 cup sugar 1 tablespoon at a time. Continue beating until the sugar dissolves and the mixture is glossy and stiff, but not dry. With a rubber spatula, spoon the meringue onto the pie, forming peaks. Make sure the meringue touches the crust all around. Sprinkle with a pinch of granulated sugar. Bake for 10 to 12 minutes, or until delicately browned. Cool and serve. Keep refrigerated after cooling.
