Recipe Ingredients for Sweet Potato Pie

4 cups sweet potato, diced
1 cup frozen corn, thawed
1/2 cup green onion, chopped
2 tbsp dried parsley
1/2 tsp rosemary
1/2 tsp pepper
1/4 tsp salt
1/2 tsp paprika
3 large eggs
3 large egg whites, beaten
5 ounces swiss cheese, sliced
1 tbsp butter, for pie plate

Recipe Directions for Sweet Potato Pie

  1. Preheat oven to 350 degrees F.

  2. Wash sweet potatoes and boil for about 30 minutes or until fork tender. Drain, cool and peel then dice about 1/2 inch.

  3. Finely chop green onion.

  4. Measure out parsley, rosemary, pepper and salt.

  5. Beat eggs and whites in a bowl.

  6. Gentley combine potatoes, onion, corn, parsley, rosemary, pepper and salt in a large bowl. Arrange mixture in a buttered pie plate.

  7. Pour beaten eggs over mixture.

  8. Place swiss cheese slices on top and sprinkle with paprika.

  9. Bake at 350 degrees F. for 35 to 45 minutes or until knife inserted in center comes out clean.
