No dipping sauce needed; all the flavour you want is baked right in! Will keep, refrigerated, up to 3 days.

Recipe Ingredients for Sweet Potato, Peanut Butter Fries

500 g sweet potatoes, (about 2 lg., or other root veg)
3 tbsp peanut butter, (48g, or a mix of almond/other nut butters)
2 tsp olive oil, (9g)
1/2 tsp salt, (sea or kosher pref.)
1 tbsp Curry powder, (or other spices to taste, but go fairly heavy or you won?t taste it on the fries)

Recipe Directions for Sweet Potato, Peanut Butter Fries

  1. Pre-heat the oven to 400 F/200C/gas mark 6.

  2. Cut the sweet potatoes into thin strips and put them in a large bowl. In a small bowl, mix peanut butter, oil, salt and curry powder until it?s smooth. Slowly drizzle the mixture over the sweet potato and toss until evenly coated.

  3. Cover a cookie sheet in parchment paper and spread the fries in a single layer. Pop them in the oven for 20 mins and then flip ?em.

  4. Bake for another 10-20 minutes or until the fries are to your liking. I like mine on the crispy side so I cut shoe-string fries and bake them for the full 35 mins or slightly more.
