Sweet version of Cheesy Au Gratin Potatoes

Recipe Ingredients for Sweet Potato & Parsnip Au Gratin

2 sweetpotato, 5" long Sweetpotato
1 cup slices Parsnips
2 tbsp Spreadable Butter with Canola Oil
22.5 grams Gold Medal All Purpose Flour
1 cup Milk, Nonfat, Fluid
1 clove Garlic

Recipe Directions for Sweet Potato & Parsnip Au Gratin

  1. Make rue with 2 tablespoons butter & 3 tablespoons of flour.

  2. Add 1 cup of skim milk (brought just to a boil) to rue.

  3. Pour rue over 2 sliced sweet potatoes and 2 sliced parsnips.

  4. Add minced garlic to taste.

  5. Sprinkle low fat or fat free cheese over top and bake for 30-40 minutes until bubbly and brown on top.
