Cheesy Au Gratin made with Sweet Potatoes and Parsnips. A sweet version of au gratin.

Recipe Ingredients for Sweet Potato & Parsnip Au Gratin

1/2 cup slices Parsnips

Recipe Directions for Sweet Potato & Parsnip Au Gratin

Slice up sweet potatoes & parsnips. Place in baking dish. Add fresh minced garlic to taste. Make rue with 2 tsps of butter, 3 tsp of flour and add 1 cup skim milk (brought to just boiling). Pour rue over potatoes and add shredded low fat cheese - swiss is also good. Bake in oven at 350 degrees for 30-40 minutes util bubbly and brown on top.
