Recipe Ingredients for Sweet Potato Pancakes

1 cup, mashed Sweetpotato
0.75 cup Wheat Flour, White, All-purpose, Enriched, Unbleached
1.75 tsp Baking Powder
0.5 tsp Salt, Table
0.25 tsp Nutmeg, Ground
1 large Egg, Whole
0.75 cup Milk, Nonfat, Fluid
2 tbsp Butter

Recipe Directions for Sweet Potato Pancakes

Cook the sweet potatoes (either baked or boiled) then remove the skin and mash the potatoes. Combine the flour, baking powder, salt, and nutmeg in one bowl. In a separate bowl combine the sweet potatoes with the egg (beaten), milk, and butter (melted). Blend the sweet potato mixture with the flour mixture to form the batter. Drop by heaping spoonfuls onto a heated griddle or nonstick frying pan. Flip only once, when the top surface begins to bubble. Enjoy!
