A tasty, healthier alternative to regular pancakes. Great for breakfast in the fall/winter months.

Recipe Ingredients for Sweet Potato Pancakes

2 1/2 cups sweet potatoes, cubed
3/4 cup whole wheat flour
3/4 cup all purpose flour
3 1/2 tsp baking powder
1/2 tsp nutmeg, ground
1 tsp cinnamon
2 eggs, beaten
1 cup milk
1 cup buttermilk
2 T butter, melted
1 tsp vanilla

Recipe Directions for Sweet Potato Pancakes

  1. Boil sweet potato cubes till tender but firm, about 15 minutes. Drain and plunge into cold water to loosen skins. Drain, remove skins and mash well.

  2. In medium bowl, mix all dry ingredients. In separate bowl mix sweet potatoes with eggs, milk, buttermilk and melted butter and mix well.

  3. Blend sweet potato mixture to flour mixture to form batter (add milk as needed if batter is too stiff).

  4. Preheat lightly greased griddle over medium-high heat. Drop batter onto griddle and cook until golden brown, turning once with spatula when surface begins to bubble.
