"Deceptively Delicious" No Egg, No Milk, Veggie Filled Pancakes

Recipe Ingredients for Sweet Potato Pancakes

1/2 cup Sweet potato, pureed
1 cup water
1/4 tsp cinnamon, ground
1 cup Whole Wheat Flour
2 tbsp Splenda
1 tbsp Baking Powder
1 tbsp Vegetable Oil

Recipe Directions for Sweet Potato Pancakes

Combine water, Sweet Potato Puree and Cinnamon in a large bowl. Add Flour, Splenda and Baking Powder. Blend until Smooth. Heat Oil in large skillet. Pour 1/4 cup of mixture per pancake. Cook until bubbles form on top of pancakes, flip and cook 1 more minute, or until evenly browned. Remove from heat.
