Recipe Ingredients for sweet potato pancakes-- Low GI

1 lb sweet potatoes
1/2 cup onions
3 egg whites
2 tbsp flour
1/2 tsp salt
1/4 tsp black pepper
4 tsp canola oil

Recipe Directions for sweet potato pancakes-- Low GI

  1. prepare apple cherry chutney:

  2. combine 1 cup chunkey applesauce, 1/2 cup tart cherries, 2 Tb brown sugar, 1 tsp lemon uice, 1/2 tsp cin and 1/8 teaspoon nutmeg in small saucepan and bring to boil. reduce heat and simmet 5 minutes.

  3. cut potatoes into chunks. combine potatoesonion,egg whites, flour, salt and pepper in food processor until smooth,

  4. heat large skillet add 1 tsp oil spoon 1/3 cup batter per pancake. cook 3 pancakes at a time, 3 mins per side. serve with chutney or peaches or berries (low GI fruits
