Low fat, not overly sweet high fiber muffins

Recipe Ingredients for sweet potato and oatmeal muffins

1 cup spelt flour, whole grain
1 cup rolled oats
2 tbsp rolled oats
1/3 cup brown sugar
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 tsp vanilla
1 egg
2 tbsp grapeseed oil
1 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp allspice
1/2 tsp ginger
2 tbsp flax meal
2 tbsp wheat bran
1/3 cup unsweetened applesauce
15 oz canned yams

Recipe Directions for sweet potato and oatmeal muffins

  1. Mix dry ingredients except for flax and sugar.

  2. Beat wet ingredients with flax and sugar.

  3. Add dry ingredients to wet ingredients and blend.

  4. Fill greased muffin tins.

  5. Bake at 350 for 45 minutes.
