This is a basic recipe for those following a baseline diet. Those who are not, can add sugar, cranberries, pecans, and/or butter.

Recipe Ingredients for Sweet Potato Oatmeal Bread

1 cup instant oats (ground)
1 cup instant oats
1 cup rice flour
1/4 cup oil (optional)
1/4 cup honey (optional)
2 cups sweet potato (baked, peeled and mashed)
3 egg whites
2 tablespoon water
1 teaspoon Grapefruit rind
1 tablespoon cinnamon
1 teaspoon nutmeg
1/2 teaspoon Salt, Table
3 teaspoon baking powder

Recipe Directions for Sweet Potato Oatmeal Bread

  1. Mix all the dry ingredients

  2. Mix in all the wet ingredients.

  3. Spray bread pan with Crisco.

  4. Fill in mixture and let it sit while the oven preheats to 325.

  5. Bake for 40-45 minutes. The center will remain moist.

  6. Let it cool completely before slicing. Yields 16 slices. Serve with a tiny bit of cinnamon butter and honey.
