Small sweet potato bars - great for kids and families on the go. Perfect for breakfast!

Recipe Ingredients for Sweet Potato Oat Bars

2 large sweet potatos
2 cup quick oats
1/8 cup brown sugar
1 tbsp cinnamon
1/2 tbsp canola oil
1 tbsp flax
1/4 cup maple syrup
1/3 cup orange juice

Recipe Directions for Sweet Potato Oat Bars

  1. Wash and scrub sweet potatos. Pierce with fork and microwave on high about 6 minutes, until soft.

  2. Preheat oven to 400.

  3. Cut sweet potatos lengthwise and scoop out flesh. Place in large bowl. Add all ingredients, except oats. Mix oats in well.

  4. Lightly grease 8x8 baking pan. Pour mixture evenly into pan. Bake 25 minutes. Let cool 10 minutes. Cut into 12 squares. Serve immediately or store for 3 days in an airtight container. These also freeze well.
