Sweet Potato Muffins Recipe

Makes 12 servings



I make 12 large muffins, you can make smaller ones obviously the nutritional info will change. Use applesauce instead of oil, you may need a bit more if the batter seems really thick.

Recipe Ingredients for Sweet Potato Muffins

1 cup brown sugar
1 tablespoon honey
1 teaspoon cinnamon
1/2 teaspoon nutmeg
2 teaspoons baking powder
2 cups whole wheat pastry flour
3 cups yams, shredded
1 teaspoon vanilla
2 eggs
1/2 cup raisins
1/2 cup applesauce
1/8 teaspoon salt

Recipe Directions for Sweet Potato Muffins

  1. Preheat the oven to 350F/gas mark 4

  2. Oil 12 large muffin cups

  3. Whisk together the sugar, honey, vanilla, eggs and apple sauce. In a separate large bowl combine the flour, baking powder, nutmeg, cinnamon, salt and sweet potato. Slowly add the flour mixture to the egg mixture, mix well then stir in the raisins.

  4. Spoon batter into muffin tins and bake for 25-30 minutes.

  5. I think raisins work well but use any dried fruit of your choice. Walnuts would be another addition if you are feeling nutty.
