Recipe Ingredients for Sweet potato muffins

3 medium Sweetpotato
1.75 cup Wheat Flour, Whole-grain
0.5 tsp Cinnamon, Ground
0.5 tsp Nutmeg, Ground
0.5 tsp Salt, Table
2 large Egg, Whole
100 grams Sweetener
0.5 cup Vegetable Oil, Canola
0.5 cup Milk, Nonfat, Fluid
0.5 tbsp Orange Peel

Recipe Directions for Sweet potato muffins

  1. Bring a saucepan 3/4 full of water to a boil, add the sweet potatoes and cook until tender, 15-20 minutes. Remove from the heat and drain thoroughly. Transfer to a food processor and pulse until slightly fluffy. Scrape into a bowl and let cool to room temperature.

  2. Preheat an oven to 400F (200C). grease 12 standard muffin cups with nonstick spray.

  3. In a bowl, stir together the flour, cinnamon, nutmeg, baking powder and salt.

  4. In another bowl, combine eggs, truvia, oil, milk, and orange zest. Whisk vigorously for 1 minute. Add the mashed sweet potatoes and beat until completely blended. Add the flour mixture and stir until just evenly moistened. the batter will be slightly lumpy.

  5. Spoon the batter into each muffin cup, filling 3/4 full.

  6. Bake until golden, dry, and springy to touch, 20-25 minutes. Transfer to a wire cooling rack and let cool.
