Recipe Ingredients for Sweet Potato Muffins

1/2 cup brown sugar
1 egg
1/3 cup canola oil
3/4 cup milk
2 tsp vanilla
2 cups sweet potato, cooked and mashed
2 cups Whole Wheat Flour
1/4 tsp salt
1 tbsp baking powder
1 tbsp cinnamon
1 tsp ginger

Recipe Directions for Sweet Potato Muffins

  1. Preheat oven to 350F

  2. Beat egg and mix together brown sugar, oil, milk and vanilla.

  3. In a separate bowl, stir together flour, spices, salt, and baking powder.

  4. Add dry ingredients to wet ingredients and stir until just mixed.

  5. Divide into 24 muffin cups, bake at 35oF for 15-20 minutes. Do not overcook.
