Recipe Ingredients for Sweet Potato Moroccan Stew

2 tsp chicken broth, reduced sodium
1 onion, medium yellow chopped
6 cloves garlic, pressed
1 1/2 tsp curry powder
1 1/2 tsp ground cumin
1/4 tsp ground allspice
14 1/2 ounces diced tomatoes, canned low salt
1 can chicken broth, reduced sodium
1 cup garbanzo beans, no salt added and drained
16 ounces sweet potatoes, fresh, one medium, peeled and 3/4 in chunks?
12 ounces zucchini, cubed (3 medium)
1/4 cup fresh mint, loosely packed and chopped

Recipe Directions for Sweet Potato Moroccan Stew

  1. Med skillet, heat oil over medium heat. Add onion and cook till tender and browned?stir in garlic curry cumin and allspice. cook 30 seconds

  2. Add tomatoes, broth, beans and sweet potato and cover to boiling over med high heat. Reduce heat to medium and cook 10 min longer.

  3. Stir in zucchini and cover covered till tender. Stir in mint.

  4. Prepare couscous per package and serve.
