Recipe Ingredients for Sweet potato laced salad

1 cup yam
4 cups baby spinach
1 medium tomato
1 ounce feta cheese
1 salt
1 pepper

Recipe Directions for Sweet potato laced salad

  1. in a deep pan combine diced yams with around two cups of water, add salt and pepper to taste, cover and simmer until sweet potatoes are tender. Set sweet potatoes aside.

  2. In a deep bowl add spinach, tomato and feta cheese, toss with your favorite dressing (I just use about 4 tbsp of balsamic vinegar), this will up the nutrition information so be sure to alter the nutrition specifics to your needs.

  3. serve on a plate and top with sweet potatoes
