Diced sweet potatoes and vegetables with diced chicken and herbs.

Recipe Ingredients for Sweet Potato Hash

1 cup, chopped or diced Chicken, Breast, Meat Only
2 sweetpotato, 5" long Sweetpotato
0.5 medium (2-1/2" dia) Onions
0.5 medium Squash, Summer, Zucchini, Includes Skin
2 tbsp Rosemary, Fresh
2 tbsp, ground Basil, Dried
1 serving Coarse Kosher Salt
2 tsp Pepper, Black
1 tsp Pepper, Red Or Cayenne
3 tbsp Olive Oil

Recipe Directions for Sweet Potato Hash

  1. Heat oil in pan on medium high, brown chicken, and remove to plate.

  2. Reduce heat to medium, saute onion, potato, rosemary, basil, salt, & pepper about 8 minutes, stirring often.

  3. Add zucchini and chicken, sprinkle with red pepper flakes and cook 4-6 minutes until zucchini is tender.
