Recipe Ingredients for Sweet Potato Hash Browns

1/2 bell pepper
1/2 onion
1/2 teaspoon salt
1 tablespoon olive oil
1 tablespoon unsalted margarine
2 sweet potato
1/2 teaspoon cayenne pepper

Recipe Directions for Sweet Potato Hash Browns

  1. Cook bell pepper and onion in oil in a nonstick skillet over moderately high heat, stirring, until bell pepper is softened with brown edges. Transfer to a bowl.

  2. Add margarine to skillet and heat over moderately high heat until melted. Add potatoes and cook, undisturbed, until undersides are golden, about 3 minutes.

  3. Turn potatoes over and cook, stirring once or twice, until most are golden and crusty, 3 to 5 minutes more.

  4. Stir in bell pepper mixture, cayenne pepper, and salt.
