Chinese veggie stir fry with sweet potato cubes, coconut milk and green curry.

Recipe Ingredients for Sweet potato green curry stir fry

2 cups stir fry vegetables
2 cloves garlic
1/2 onion
1 cup sweet potato
1/3 cup coconut milk
1 tsp curry
1/3 c couscous
1 tbls olive oil

Recipe Directions for Sweet potato green curry stir fry

  1. Heat olive oil over medium heat.

  2. Add finely chopped onion and press or minced garlic, saute till soft.

  3. Add frozen chinese vegetable mix, stir and cook till thawed.

  4. Add frozen cubed sweet potato, saute till just soft.

  5. Add coconut milk and green curry paste.

  6. Add a bit of water if needed.

  7. Sprinkle in couscous and stir, cover and let simmer for 3-5 minutes.

  8. Salt and season to taste.

  9. ***Fresh Cilantro or Basil is a nice contrast to the curry***

  10. ***Serve with semi dry, full bodied Gewurtzaminer
