Recipe Ingredients for Sweet Potato Gnocchi

1 lb yams
1/2 cup light ricotta cheese
1 3/4 cups whole wheat flour
1/2 tsp salt
1/2 tsp black pepper
1 tsp nutmeg
1 tsp cinnamon
1 tsp ginger

Recipe Directions for Sweet Potato Gnocchi

  1. Cook yams.

  2. Mash yams, removing skins, with ricotta cheese, salt, pepper, and half the seasonings except the sage.

  3. Add flour, 1/2 cup at a time, mixing well each time.

  4. Flour a work surface with the remaining 1/4 cup of flour.

  5. Divide dough into 4 balls. Roll each ball into a 1" diameter snake.

  6. Cut snake into 1" pieces. Roll each piece and decorate with fork.

  7. Drop gnocchi into pot of boiling water. Boil for about 5-6 minutes.

  8. For the butter sauce:

  9. Melt margarine in a small saucepan. Allow to bubble and begin to brown.

  10. Add maple syrup, remaining spices, and sage. Stir.

  11. When butter is browned, pour over cooked gnocchi. Serve immediately.
