Sweet Potato & Fig Pasta with Goat Cheese

Recipe Ingredients for Sweet Potato & Fig Pasta with Goat Cheese

2 cup sweet potato(es)
1 chopped large bell pepper(s)
1/2 cup tomato(es), diced
1 tbsp parsley
1 tbsp basil
1 oz goat cheese
2 oz uncooked whole wheat spaghetti
1/8 cup water
1/2 tbsp fresh lemon juice
4 medium fig(s)

Recipe Directions for Sweet Potato & Fig Pasta with Goat Cheese

Cook pasta. Saute sweet potato, bell pepper and tomatoes in water and cook, add chopped figsand cook. Drain pasta reserving 1/2 cup of cooking water. Return pasta to pot and add vegetable mixture, parsley, lemon juice and cheese and toss to combine. Add the pasta water a little at a time to achieve desired consistency.
