Recipe Ingredients for Sweet Potato and Eggplant Lasagna

1 eggplant, unpeeled (approx 1-1/4 lb) Eggplant
32 oz Sweetpotato
4 1/4 cup Carrots Shredded
1 cup Corn, Sweet, Yellow
1 cup Peas, Green
1 serving Worcestershire Sauce
2 tbsp Olive Oil
1 slice, medium (1/8" thick) Onions
1 cup Low Fat Cottage Cheese
2 clove Garlic
1/2 teaspoon Thyme
1/2 tsp, ground Basil, Dried
1/2 tsp Rosemary, Dried
3 cup Reduced Fat Mozzarella Shredded Cheese

Recipe Directions for Sweet Potato and Eggplant Lasagna

  1. Combine Worcestershire sauce, peas, corn and carrots. Set aside.

  2. Heat olive oil in a large skillet and add onion, garlic and herbs. Sauté until onions are translucent.

  3. In an 11" x 17" baking dish layer sweet potatoes, eggplant, carrot mixture, tomato sauce, cottage cheese and 1 cup mozzarella. Top with remaining cheese and bake in 350° oven until cheese is brown and casserole is hot in the middle, 30 ? 45 minutes.
