This was originally a Paula Deen recipe that I altered to make more diet? friendly. I substituted the soy flour for part of the all-purpose, used 1/2 Splenda, 3 whites in place of 2 large eggs, ff cottage cheese in place of sour cream. You were supposed to fry these in oil but I decided to try baking. They came out just like a biscuit.

Recipe Ingredients for Sweet Potato Doughnuts with Maple Icing

2 3/4 cups all-purpose flour
3/4 cups soy flour
1/2 cup sugar
1/2 cup Splenda
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp cinnamon
1/2 tsp salt
3 large egg whites, slightly beaten
1 cup fat free cottage cheese
1 cup sweet potato, mashed

Topping:
2 cups confectioners' sugar
4 tbsp milk
1/4 tsp maple extract
3/4 cup pecans

Recipe Directions for Sweet Potato Doughnuts with Maple Icing

  1. Preheat oven to 450.

  2. In a medium bowl, combine flour, sugar, Splenda, baking powder, baking soda, cinnamon, and salt. In a large bowl, combine egg whites, cottage cheese, and sweet potato. Gradually add flour mixture, stirring to combine.

  3. Turn dough out onto a heavily floured surface. Knead in flour with hands as needed (dough will be sticky). Roll out dough to 1/2-inch thickness. Cut out dough with a 2 1/2-inch round cutter. Cut out center of doughnuts with a 1/2-inch round cutter. Re-roll dough as needed.

  4. Place on cookie sheet and bake for 10 - 12 minutes.

  5. In a small bowl, combine confectioners' sugar and 3 tablespoons milk; stir well. Add additional milk to reach desired consistency. Stir in maple extract.

  6. When doughnuts have finished baking, dunk each in icing making sure entire top is coated. Follow with pecans.
