Recipe Ingredients for sweet potato custard

4 lbs sweet potato
8 eggs
4 cups skim milk
2 tsp salt
1 tsp nutmeg
1/2 tsp pepper
1/4 cup maple syrup (optional)

Recipe Directions for sweet potato custard

  1. preheat oven to 400. on a baking sheet, bake sweet potatos until soft about one hour. Remove from oven and lower the heat to 300. let the potatos cool slightly then peel. transfer to a large bowl and mash.

  2. in another large bowl whisk together the eggs, milk, salt, nutmeg, and pepper. then whisk into the potatos.

  3. Using a food processor and working in batches, puree the sweet potato mixture. Pour into a greased 4qt casserole dish, place on a baking sheet and bake until just set but is still jiggly in the center. about 50 mins.

  4. drizzle with the maple syrup. Serve warm or at room temp.
