Nice and filling - omit the cream and use veggie stock instead of water for a vegetarian version (lower calories too!)

Recipe Ingredients for Sweet Potato Curry

19 oz garbanzo beans
1/2 medium onion, chopped
1 c cauliflower florets
1 medium sweet potato, cubed
1/4 c celery, chopped
1/4 c fennel, chopped
1 clove garlic, minced
2 tbsp curry powder
1 tsp black pepper
1/8 c half and half cream
1 c water
1/2 tsp olive oil

Recipe Directions for Sweet Potato Curry

Saute onion, garlic, fennel and celery in olive oil for 3 minutes. Add garbanzo beans and water, mix then add sweet potato and cauliflower, curry and pepper. Cover and simmer for 15 minutes, stirring occasionally. crush some of the beans and potato pieces to thicken liquid. Add half and half if using and adjust seasoning to taste. Mix well and simmer another minute. Serve with warm naan bread.
