Good use for leftover sweet potatoes from thanksgiving

Recipe Ingredients for Sweet potato curry

2 cups sweet potatoes
3/4 cup red onion
1 tsp oil
1 tsp ghee
2 tsp curry powder
1 green pepper
1 yellow pepper
3/4 cup frozen peas

Recipe Directions for Sweet potato curry

  1. roast sweet potatoes

  2. heat oil and ghee, saute onions for 3 min then add curry powder and saute an additional 2 min

  3. add sweet potatoes, frozen peas and sliced peppers

  4. add 1 cup water, simmer covered for 20 min

  5. serve with plain yoghurt
